Spy Valley Echelon

The grapes were hand-harvested. The juice was fermented in stainless steel until dry. Malolactic fermentation and matured on gross lees for six months prior to blending. The final blend was then tirage bottled and matured on lees for 18 months prior to disgorgement. Colour is Mid straw. Fresh bouquet of apples and berry fruits, well-integrated with biscuit and marzipan derived aromas. A stylish wine. Tightly structured apple and citrus flavored palate with underlying creaminess and a long, lingering finish.
