The grapes are hand-picked into boxes and, after stripping out the unsuitable grapesin the vineyard, they are taken to the winery within half-an-hour of being picked. They are then cleaned and 70% of the acini are broken. Traditional vinification with purification up turning and crushing over 10/12 days. After drawing off, it is decanted at a controlled temperature into 15/20 Hl barrels were it is aged for about 15 months.
Ruby coloured, intense clean bouquet whit notes of red-berry fruit and slight touch of vanilla, liquorice and spices, good body, balanced warmth reminiscent of forest fruit preserves, characteristics that linger well in the mount.
