The grapes are harvested and collected in 20 kg trays, then follows soft pressing and fermentation in steel tanks at controlled temperatures of between 18 and 20°C. Straw-yellow in colour, a fine floral bouquet, with hints of hawthorn cherry and acacia flowers.
