Description: The Bourgogne red is delightful, fruity, soft in the mouth and easy to drink with very charming and expressive aromas A rustic, earthy and sauvage nose of primarily red berry fruit aromas leads to round, supple and easy-to-like flavors that possess a bit of youthful asperity. Perfectly good at this level.

Production: A clonal selection with 35 year-old-vines. The grapes are hand-picked, and de-stemmed. The fermentation is started rapidly maceration lasts about 12-14 days,with the cap punched frequently. No enzymes of any kind are used to extract color artificially. The free-run wine and first press are blended. The wine will mature in barrels. The wine is bottled after 10- 12 months without being racked but after a light filtration.

Food Combination: Beef cooked in red wine, beef tongue stew, red meat, teriyaki, eel kabayaki, game, Peking duck.
