Description: Light straw with a pale green hue. Gooseberry and light fresh melon aromas are characteristic of this wine. There is a beautiful litchi note that comes through to add to the complexity of the nose. The tropical fruit flavors give way to fresh citrus that support this multilayered Sauvignon Blanc. There is a lovely lime undertone that works in perfect harmony with the sweet, fresh melon flavor that follows through. This wine has a great mid-palate mouth feel, and a clean, crisp finish.
Production: The grapes are sourced from various pockets of vineyards from the Breedekloof, Darling, Elgin, and Stellenbosch regions. The pockets were selected for their different characteristics that they instill in the wine. The vineyards ranged from 315m to 600m above sea level. A diverse composition of soil and topography add complexity and an array of different characteristics to the wine. Reductive style of winemaking is used to preserve the aromatic fruit character of the wine. The wine was fermented at 12-14°C in stainless steel tanks until dry.
