Description: Notes of cherry, blackberry, wild berries and elegant black pepper. The excellent acidic structure is well blended and supported by fine tannins.

Production: Vinification De-stemming and soft pressing occurs before fermentation, which takes place without any added yeasts. The wine remains in contact with the skins for 30 days. Aging and Refining Once malolactic fermentation has concluded, the wine is transferred and refining continues in amphora for another 7 months.

Food Combination: Excellent with game, roast pork (ideal with apples) and important, semi-mature cheeses. A wine that stands on its own, to be enjoyed in a meditative atmosphere.
