Description: Clear aroma of red fruit with vanilla, licorice and light nuances of spices. It has a refreshing taste, yet is soft, elegant and wellbalanced, with wild berry jam flavor and long-lasting character in the mouth.

Production: Manual harvesting of the grapes in crates after the less suitable grapes have been stripped from the vineyard; brought to the cellar within 1/2 hour, destemmed with soft crushing of about 70% of the grapes, traditional vinification with pumping over and punching down for 10/12 days at a controlled temperature, racking and decanting into 15/20 Hl. capacity barrels for about 15 months. This is followed by ageing in the bottle for at least 6 months.

Food Combination: It goes well with Tuscan cured meats and more mature pecorino cheeses. Excellent with roasts, game and more savoury dishes based on wild boar and venison. Excellent with grilled meats and Florentine steak.
