Description: A distinctly gamey nose features ripe dark berry fruit notes, earth, underbrush and hints of smoke and crushed herbs that precede the earthy, well-muscled and substantial full-bodied flavors blessed with buckets of extract and a delicious, powerful and gorgeously long finish. This is an impressively intense and punchy Corton. More than 40 years old on average. The grapes are picked by hand, then sorted, crushed and completely destemmed.

Production:  Fermentation is started rapidly without prefermentary maceration. Punching the cap is the only extraction method used to obtain the aromas, colors, and tannins; there are no added enzymes or forced heating extraction. Vatting time is between 12 and 14 days, then the free-run wine and the first pressing are blended, settled cold, and put in barrels for maturing. The Corton is matured in oak barrels, 50 % of which are new oak from the forests of Bertranges and Tronçais. The period allowed for maturing the wine is from 15 to 18 months; the wine is then bottled without fining and with a very slight filtration.

Food Combination: Beef cooked in red wine, meat with rich sauce, game, matured cheese.
