Description: Aromas hint at Lemon grass and granny smith apple with a flinty minerality. On the palate, a bright beam of acidity leads with wet stone, lemon-lime, and salt water following. Fine pale yellow with a green tinges. There is an acute intensity to this wine that makes it pitch perfect.
Production: Vines:25-30 years old. Soil Clay, Marl, Kimmeridgian Limestone. Yield: 55 hl/ha. Fermentation in stainless steel cuves for 3-4 weeks at 20˚C. Aging: 6 months on fine lees in stainless steel. Farming: Lutte Raisonnée.
Food Combination: Seafood platter (oyster, mussels etc), Goat Cheese (crottin de Chavignol), Salmon, Sushi, Apéritif.
